Making limpets: two delicious recipes from Giglio island

You have had a sort of culinary inspiration: making a typical summer dish, independently of the season and climate. A dish that must have, as a key ingredient, limpets. Now you need only a good recipe that encourages you to start cooking.

There we can suggest two. Both typical of the beautiful Giglio Island.

 

Limpets soup

  • 1 kilogramme of limpets
  • 200 grams of peeled tomatoes
  • half onion
  • 600 grams of potatoes
  • toasted stale bread
  • oil
  • a small bunch of parsley
  • chili pepper
  • white wine

The preparation is very simple: heat oil and garlic in a pot; first add the tomato, brown it very well; then add all the other ingredients gradually and the amount of water to achieve the consistency you prefer. In the end, place two slices of bread on each plate and pour the soup.

 

Spaghetti with limpets sauce

  • 400 grams of spaghetti
  • 500 grams of limpets
  • 200 grams of peeled tomatoes
  • half onion
  • oil
  • parsley
  • chili pepper
  • white wine

After just searing limpets, prepare a sauce with onion and pepper, simmering with white wine. Add limpets and some cooking water in which you cooked them. Cook over low heat until the tasty sauce reaches the consistency you want. After cooking them, put spaghetti in the pan with the sauce.

 

These two recipes, besides being  fingerlicking meals, also will give you an idea of ​​how appetizing Giglio island’s culinary tradition is.
