Giglio island recipes: how to prepare tonnina sott’olio

It is one of the most famous dishes of Giglio Island. And you’re going to prepare it with your hands. And you need the recipe of tonnina (tuna fish).

Before you start cooking, you have to decide one thing: do you prefer tonnina in olive oil or cooked in a frying-pan?

 

Tonnina in olive oil

Ingredients for 6 persons: 400 gr of tonnina, olive oil.

How to prepare:

  • Wash tonnina with cool water
  • Leave it in a liter of water for 12 hours
  • Remove tonnina from the water
  • Wipe it
  • Tear it into pieces (not cut)
  • Immerse it in oil.

A good side dish for tonnina is Giglio Island tomato salad (prepared with celery and fresh onions).

 

Tonnina cooked in a frying-pan

Ingredients for 4 persons: 300 gr of tonnina, 4 onions, 4 potatoes, olive oil, 1 hot pepper, white wine, tomato sauce.

How to prepare:

  • Wash tonnina with cool water
  • Leave it in a liter of water for 2-3 hours
  • Sauté oil and sliced onions in the frying-pan
  • Add tonnina cut into pieces
  • Add white wine
  • Add tomato sauce, hot pepper and tomatoes cut into cubes
  • Cook.

 

Now that you know the recipe tonnina, you can start preparing it with your hands. But if you want to taste this traditional dishes in its land, there is only one way: book a ferry ticket to Giglio Island.
